This easy coleslaw recipe is the perfect side to pair with anything you’re grilling up this summer! Serve it as a side with a pulled pork sandwich, hamburger, hot dog, and more.

True story. I’m not a fan of coleslaw. I never eat coleslaw from a deli or supermarket. For me the best coleslaw recipe is made from scratch! As summer rolls around, let this savory coleslaw be your go-to side dish for all your outdoor gatherings, barbecues, and potlucks. It’s fresh, light and easy to make! Where most classic cole slaw recipes are made with more than a cup of mayonnaise, mine is much lighter on the mayonnaise. Is it Cole Slaw or Coleslaw?

The correct spelling for the coleslaw side salad served alongside burgers and sandwiches is coleslaw. It is sometimes mistaken for “cold slaw” as it is usually served cold, but the word comes from the Dutch koolsla, with cole referring to cola crops such as cabbage.

Coleslaw ingredients

  • Cabbage: Green and purple cabbage shredded with the large holes of a box grater.
  • Carrots: You will need a cup of chopped carrots.
  • Coleslaw Dressing: Chopped shallot, Dijon mustard, white wine vinegar, light mayonnaise, salt and pepper

How to make coleslaw

  1. Prepare the dressing: Whisk the shallots, mustard and vinegar in a large bowl, then add the mayonnaise, salt and pepper.
  2. Make the coleslaw: Chop cabbage and carrots. Add them to the sauce and mix. Refrigerate for at least 30 minutes to an hour before serving to allow the flavors to meld.

Variations:

  • Fastest coleslaw: Use 6 cups of store-bought coleslaw mix instead of the coleslaw mix.
  • More vegetables: Add chopped fennel for more greens.
  • Vinegar: Swap the white wine vinegar for apple cider vinegar.
  • Taste: Add 1/2 to 1 teaspoon celery seeds for more flavor.
  • mayo: I think mayonnaise brings out the flavor and texture of the coleslaw. However, if you’re not a fan, substitute Greek yogurt or buttermilk.
  • Sweetest Slaw: If you want to add sweetness you can add a few teaspoons of sugar or monk fruit sweetener.

What to serve with coleslaw

When I think of coleslaw, I think of summer. This healthy coleslaw side dish goes perfectly with grilled meats or other popular summer dishes. Here are some ideas:

  • Hamburger: Turkey burgers, veggie burgers, salmon burgers
  • Grilled Chicken: Grilled chicken breast, grilled chicken sandwich
  • Grilled fish: Grilled crab legs, grilled salmon skewers, grilled lobster tails
  • Barbecue: Serve up a traditional barbecue dinner with this homemade barbecue sauce, your choice of grilled beef, pulled pork, pickled onions, potato salad, pasta salad, corn on the cob, and macaroni and cheese.

How to store coleslaw

If you’re taking coleslaw to a party, keep it on ice or in the refrigerator until just before serving since it contains mayonnaise. Coleslaw will keep in the refrigerator for up to 4 days.
